- Cook the bacon in a skillet over medium heat for 6-8 minutes until crispy. Drain on paper towels and crumble.
- If using fresh corn, cut the kernels off the cob. If using frozen, thaw and drain.
- Dice the onions, tomatoes, and jalapeños finely and add to a large mixing bowl.
- Add the corn and bacon to the bowl, and then add chopped cilantro.
- Squeeze lime juice over the mixture, and season with salt and pepper. Stir to combine.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
