  • 2 cups Fresh Corn grilled or frozen
  • 6 slices Bacon crispy and crumbled
  • 1 cup Sweet Vidalia Onions finely diced
  • 2 medium Tomatoes ripe and diced
  • 1 small Jalapeños diced, seeds removed for milder
  • 1/4 cup Cilantro chopped; substitute with parsley or basil if desired
  • 2 tablespoons Lime Juice freshly squeezed
  • to taste Salt
  • to taste Pepper
For Extra Flavor
  • 1 small Habanero Peppers diced for extra heat
  • 1 teaspoon Smoked Paprika vegetarian substitute for bacon
  • 1 cup Mango or Pineapple diced for added sweetness

Method
 

Step-by-Step Instructions
  1. Cook the bacon in a skillet over medium heat for 6-8 minutes until crispy. Drain on paper towels and crumble.
  2. If using fresh corn, cut the kernels off the cob. If using frozen, thaw and drain.
  3. Dice the onions, tomatoes, and jalapeños finely and add to a large mixing bowl.
  4. Add the corn and bacon to the bowl, and then add chopped cilantro.
  5. Squeeze lime juice over the mixture, and season with salt and pepper. Stir to combine.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.
