  • 6 pieces Tomatillos Husked and halved
  • 2 cloves Garlic Whole for roasting
  • 1 medium Onion Use white, yellow, or red
  • 1 cup Fresh Pineapple or Canned Pineapple Core and slice fresh or use drained canned rings
  • 2 pieces Chipotle Peppers in Adobo Adjust quantity for desired spice
  • 1 teaspoon Kosher Salt Adjust to taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to the high broiler setting. Line a baking sheet with aluminum foil for easy cleanup.
  2. Arrange the halved tomatillos, whole garlic cloves, sliced onion, and pineapple on the baking sheet. Roast under the broiler for about 10 minutes.
  3. Flip the ingredients over and broil for an additional 5 minutes, until charred and fragrant.
  4. Transfer the roasted ingredients to a blender. Add chipotle peppers and blend until chunky.
  5. Season with kosher salt and mix well before serving.
