For the Chicken
  • 4 pieces Chicken Breasts Skinless and boneless.

For the Crunchy Topping
  • 1 cup Panko Breadcrumbs Regular breadcrumbs can substitute.
  • 2 tablespoons Butter
  • 2 tablespoons Fresh Parsley Optional for garnish.

Method
 

Step-by-Step Instructions
  1. Slice the chicken breasts in half lengthwise and season both sides with salt and pepper.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat, brown the chicken for about 5 minutes on each side.
  3. In the same skillet, lower the heat, sauté minced garlic until fragrant, then add canned tomatoes, basil, and chili flakes.
  4. Return the chicken to the skillet, cover, and simmer for 15 minutes until cooked through.
  5. Melt 2 tablespoons of butter in a separate pan, add remaining garlic and panko breadcrumbs, and toast until golden brown.
  6. Sprinkle the toasted breadcrumbs over the Chicken Arrabiata before serving.
