For the Sauce
  • 1 lb Spicy Chicken Italian Sausage substitute with turkey sausage or omit for vegetarian version
  • 1 lb Butternut Squash pre-cut or frozen options are perfect
  • 2 tbsp Whipped Butter can be replaced with olive oil for lighter option
  • 2 medium Shallots or regular onions if needed
  • 3 cloves Garlic fresh garlic is best
  • 6 leaves Sage Leaves thyme can be used as a substitute
For the Pasta
  • 12 oz Pasta (Wheat or Gluten-Free) whole grain or gluten-free based on dietary needs
  • 1 tbsp Kosher Salt to taste
  • 1 tbsp Freshly Ground Black Pepper to taste
For the Veggies
  • 4 cups Baby Spinach can swap with kale
  • 0.5 cup Fresh Shaved Parmesan Cheese use nutritional yeast for dairy-free

Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water and add the butternut squash. Cook for about 10-12 minutes until fork-tender.
  2. In a blender, combine the cooked butternut squash with a splash of water and blend until smooth and creamy.
  3. In the same boiling water, add pasta and cook according to package instructions, reserving 1 cup of pasta water.
  4. Heat a large skillet over medium heat. Brown the spicy sausage for 5-7 minutes, then remove and set aside.
  5. Melt butter in the skillet, then sauté shallots and garlic until translucent and fragrant.
  6. Pour blended butternut squash puree into the skillet and add reserved pasta water for desired consistency.
  7. Stir in spinach, Parmesan cheese, and sage leaves; cook until spinach is wilted.
  8. Toss the cooked pasta and sausage into the skillet, mixing until well-coated.
