- Boil a large pot of salted water and add the butternut squash. Cook for about 10-12 minutes until fork-tender.
- In a blender, combine the cooked butternut squash with a splash of water and blend until smooth and creamy.
- In the same boiling water, add pasta and cook according to package instructions, reserving 1 cup of pasta water.
- Heat a large skillet over medium heat. Brown the spicy sausage for 5-7 minutes, then remove and set aside.
- Melt butter in the skillet, then sauté shallots and garlic until translucent and fragrant.
- Pour blended butternut squash puree into the skillet and add reserved pasta water for desired consistency.
- Stir in spinach, Parmesan cheese, and sage leaves; cook until spinach is wilted.
- Toss the cooked pasta and sausage into the skillet, mixing until well-coated.
