  • 1 cup Sourdough Discard active sourdough starter can be used
  • 1 large Egg a flax egg can be used for a vegan version
  • 1 tbsp Vanilla Extract almond extract can be an alternative
  • 1 tsp Baking Soda ensure it's fresh
  • 1/2 tsp Salt
For the Frosting
  • 1 cup Vanilla Buttercream Frosting chocolate buttercream offers a tasty variation

Method
 

Baking Steps
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the browned butter, brown sugar, and granulated sugar until smooth and fluffy, about 3-4 minutes.
  3. Crack in the egg and add the vanilla extract, mixing until fully combined.
  4. In a separate bowl, whisk together the oatmeal, all-purpose flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  6. Drop spoonfuls of dough onto the lined baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until golden brown around the edges.
  7. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. Spread a generous layer of vanilla buttercream frosting on one cookie and sandwich with another cookie. Repeat until all cookies are paired.
