Step-by-Step Instructions
- Prepare the Salmon: Begin by cutting the salmon filet into bite-sized pieces, about 1 inch in size. Pat each piece dry using paper towels to remove excess moisture.
- Set Up the Breading Station: Create your breading station with three separate bowls. In the first bowl, combine flour with salt. The second bowl should contain beaten egg mixed with Dijon mustard. Finally, place panko breadcrumbs along with garlic powder, onion powder, diced dill, and parsley in the third bowl.
- Coat the Salmon Bites: Take each salmon piece and coat it in the flour mixture, then dip it into the egg mixture, and finally press into the panko breadcrumb mixture, fully coating it.
- Preheat the Oven: Preheat your oven to 400°F (200°C) while you finish coating the bites. Line a baking sheet with parchment paper and lightly grease it.
- Arrange the Salmon Bites: Carefully arrange the coated salmon bites on the prepared baking sheet, leaving space between each bite.
- Bake the Salmon Bites: Place the baking sheet in the preheated oven and bake for about 10 minutes until the panko is golden and the salmon is just starting to turn opaque.
- Broil for Extra Crunch: After baking, flip each bit over and broil for an additional 2-3 minutes, until they become crispy and golden.

Notes
Patting salmon dry, uniform sizes, and using parchment matter for best results. Watch carefully during broiling.
