Preparation Steps
  1. Slice the boneless beef shank into 4-5 inch pieces and boil with ginger for 5 minutes to remove impurities.
  2. Combine the prepped beef with chosen spices and sauces, cover with water and simmer for 1 hour.
  3. Cool the cooked beef and refrigerate wrapped in plastic wrap for 2 hours or overnight before slicing.
  4. Cook scallion pancakes in a skillet with oil for 2-3 minutes until golden brown and crispy.
  5. Assemble rolls by spreading hoisin sauce on pancakes and adding beef, scallions, cucumber, and cilantro.
  6. Roll pancakes tightly around the filling and slice in half for presentation. Serve fresh with additional hoisin sauce.
