  • ½ cup beef broth or water water is an alternative for a lighter version

  • 3 large eggs lightly beaten
  • 4 green onions thinly sliced
  • salt to taste
  • black pepper to taste
  • sesame oil pinch, optional for flavor

Step-by-Step Instructions
  1. Prepare the Ingredients: Gather all ingredients, trim and slice the beef, chop tomatoes, slice green onions, and beat the eggs.
  2. Marinate the Beef: Combine beef with cornstarch, Shaoxing wine, soy sauces, salt, and black pepper. Marinate for 15 minutes.
  3. Scramble the Eggs: Heat vegetable oil and scramble the eggs until just set, then remove and set aside.
  4. Cook the Beef: Sear the marinated beef in a hot skillet until browned and cooked through, then set aside.
  5. Sauté the Green Onions: Stir-fry white parts of green onions in the same wok for 1-2 minutes.
  6. Add the Tomatoes and Sauce Ingredients: Combine tomatoes, ketchup, brown sugar, and beef broth in the wok and boil.
  7. Thicken the Sauce: Add cornstarch slurry and simmer until sauce thickens.
  8. Combine Ingredients: Stir in the cooked beef and scrambled eggs into the sauce and heat through.
