Step-by-Step Instructions for Chicken Karahi
  1. Heat 120 ml of vegetable oil over high heat until shimmering, then add 700-800g small chicken pieces, skin side down, and cook for 5-7 minutes until golden.
  2. Reduce heat slightly; add 2.5 tbsp minced garlic and 2 tbsp minced ginger, sauté for about 2 minutes until fragrant and lightly golden.
  3. Add 5 finely diced medium tomatoes and the spices; mix well and cook on high heat for 15-20 minutes until oil separates, creating a rich gravy.
  4. Add slit green chilies and half a bunch of chopped fresh coriander; reduce heat to low and simmer for an additional 5 minutes.
  5. Garnish with matchstick ginger and fresh coriander before serving. Enjoy hot with naan or roti.
