Ingredients
  

For the Shrimp
  • 1 pound Raw Shrimp peeled and deveined
  • 1 teaspoon Garlic Powder
  • 2 tablespoons Curry Powder recommended brands include Betapac or Montego
  • to taste Salt
  • to taste Black Pepper
For the Sauce
  • 2 tablespoons Olive Oil
  • 1 tablespoon Butter
  • 1 can Coconut Milk
  • 1 tablespoon Ketchup optional
For the Veggies
  • 1 cup Bell Peppers mixed green and red, diced
  • 1 medium Yellow Onion finely chopped
  • 2 scallions Escallion finely sliced
  • 2 cloves Garlic minced
  • 1 tablespoon Fresh Thyme
  • 1 piece Scotch Bonnet Pepper whole or finely chopped
For Thickening
  • 1 tablespoon Cornstarch mixed with cold water

Method
 

Preparation
  1. Season the raw shrimp with garlic powder, curry powder, black pepper, and salt. Let marinate for about 10 minutes.
  2. Heat olive oil and butter in a large saucepan over medium-high heat. Add curry powder and 'burn' it for 2 minutes.
  3. Sauté diced bell peppers and yellow onion for 3-4 minutes until soft. Add garlic, thyme, and scotch bonnet pepper for another 1-2 minutes.
  4. Pour in the coconut milk and bring to a simmer, seasoning with salt and black pepper to taste.
  5. Fold in the seasoned shrimp and cook for 2-3 minutes until shrimp is pink and cooked through.
  6. If sauce is too thin, mix cornstarch with cold water, add to sauce, and simmer for another 2-3 minutes.
  7. Remove from heat, discard whole scotch bonnet if used, and serve hot with rice or bread.
