- Preheat your oven to 350°F (175°C) and prepare a baking sheet with a light spray of olive oil.
- In a mixing bowl, combine ground beef, salt, black pepper, paprika, Italian seasoning, garlic powder, ground cumin, and grated onion. Mix until well combined.
- Add the egg white to the beef mixture and mix until fully incorporated.
- Cut mini peppers in half lengthwise and scoop out seeds and membranes. Place cut side up on the greased baking sheet.
- Fill each pepper half with the ground beef mixture, leveling the filling with the top of each pepper.
- Bake the filled pepper halves for about 20 minutes until the peppers are tender and the beef is cooked through.
- Remove from the oven, sprinkle shredded mozzarella on top, and return to the oven for an additional 3-4 minutes until the cheese is melted and bubbly.
- Allow to cool slightly, garnish with chopped parsley if desired, and serve warm.
