Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with a light spray of olive oil.
  2. In a mixing bowl, combine ground beef, salt, black pepper, paprika, Italian seasoning, garlic powder, ground cumin, and grated onion. Mix until well combined.
  3. Add the egg white to the beef mixture and mix until fully incorporated.
  4. Cut mini peppers in half lengthwise and scoop out seeds and membranes. Place cut side up on the greased baking sheet.
  5. Fill each pepper half with the ground beef mixture, leveling the filling with the top of each pepper.
  6. Bake the filled pepper halves for about 20 minutes until the peppers are tender and the beef is cooked through.
  7. Remove from the oven, sprinkle shredded mozzarella on top, and return to the oven for an additional 3-4 minutes until the cheese is melted and bubbly.
  8. Allow to cool slightly, garnish with chopped parsley if desired, and serve warm.
