- Finely dice one yellow onion and mince a couple of garlic cloves. Set aside.
- In a large mixing bowl, combine ground beef, egg, salt, black pepper, dried onion, breadcrumbs, and Dijon mustard. Mix gently and shape into four patties.
- Heat a skillet over medium-high heat, add olive oil and butter, and sear the patties for about 5 minutes on each side until browned. Set aside.
- In the same skillet, reduce heat to medium, add onion and garlic, sauté for about 3 minutes until translucent.
- Pour in white wine to deglaze the skillet, simmer for about 2 minutes until slightly reduced.
- Add heavy cream, bring to a gentle boil, then stir in horseradish and parmesan until blended. Season to taste.
- Return the patties to the skillet, cover, and simmer on low for 5 minutes.
- Remove from heat, serve the patties with sauce, garnished with chopped chives.
