Method
 

Step-by-Step Instructions
  1. Wash and chop the apples, leaving the skins on, and place in the glass jar halfway.
  2. Add sugar and any chosen spices, then stir gently to combine.
  3. Pour water into the jar, filling to about an inch below the rim and stir again.
  4. Cover the jar with a breathable cloth and let ferment for 3–5 days at room temperature.
  5. Strain the mixture into clean glass bottles, removing solids.
  6. Seal and refrigerate the kvass to halt fermentation.
  7. Serve over ice, garnish with mint if desired, and enjoy.
