- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with butter or cooking spray.
- In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 cup of granulated sugar, 1 tablespoon of baking powder, ½ teaspoon of baking soda, ½ teaspoon of salt, and 1 cup of unsweetened shredded coconut until well combined.
- In a separate bowl, combine ½ cup of melted unsalted butter, 2 large eggs, 1 teaspoon of vanilla extract, ½ cup of buttermilk, and 1 cup of crushed pineapple. Mix until smooth and creamy.
