- In a medium saucepan over medium heat, combine the diced peaches, brown sugar, and a pinch of salt. Cook while stirring gently for about 5-7 minutes until the peaches are soft and caramelized.
- In a large mixing bowl, combine the rolled oats, almond milk, ground cinnamon, and vanilla extract. Stir well for approximately 1-2 minutes.
- Layer the oat mixture and caramelized peaches in a jar or glass, finishing with peaches on top.
- Cover the jar and place it in the refrigerator overnight for at least 4 hours.
