Ingredients
  

For the Pasta and Broccoli
  • 12 oz Orecchiette can swap with small pasta like shells or fusilli
  • 4 cups Broccoli florets can use any green vegetable like green beans or spinach
For the Cooking
  • 1 lb Italian sausage can substitute with turkey sausage or plant-based alternatives
  • 1 tbsp Olive oil can substitute with butter or vegetable oil
  • 3 cloves Garlic fresh is preferred, but pre-minced works
  • 1/2 tsp Red pepper flakes omit for milder dish or substitute with black pepper
For the Finish
  • 1/2 cup Grated Parmesan cheese can substitute with Pecorino Romano or nutritional yeast
  • to taste Cracked pepper and flaky salt can use sea salt instead

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil over high heat. Add the orecchiette and cook according to package instructions until just al dente, usually around 10-12 minutes. Reserve about a cup of the starchy pasta water before draining.
  2. While the pasta cooks, heat a large skillet over medium heat and drizzle in a tablespoon of olive oil. Add the sliced Italian sausage to the skillet, cooking for about 5-7 minutes until browned.
  3. Once the sausage is browned, stir in the minced garlic and cook for about 1 minute until fragrant.
  4. Add the broccoli florets to the skillet, cooking for an additional 5-7 minutes until they are bright green and tender-crisp.
  5. Add the drained orecchiette directly into the skillet along with a splash of the reserved pasta water. Toss together gently for about 2-3 minutes.
  6. Remove the skillet from heat and stir in the grated Parmesan cheese, mixing until it melts and coats the pasta well. Adjust seasoning to taste.
