Method
 

Step-by-Step Instructions
  1. Wash and hull 2 cups of fresh strawberries. Blend in a high-speed blender until smooth, about 30 seconds.
  2. Optional: Strain the strawberry puree through a fine-mesh strainer into a mixing bowl.
  3. Add 1/4 cup of lemon juice and 1/4 cup of honey to the strawberry puree and whisk until combined.
  4. Chill 1 cup of sparkling water in the fridge. Gently fold it into the mixture without overmixing.
  5. Pour the mixture into popsicle molds, filling about three-quarters full. Insert sticks if desired.
  6. Freeze for at least 6 hours until solid. To test, gently pull on a stick.
  7. Run warm water over the molds to release the popsicles, then serve immediately.
