  • 1 tsp Ground Mixed Spice or pumpkin spice
  • 200 g Mixed Dried Fruit or any other dried fruit mix you love
  • 50 ml Brandy or Orange Juice or apple juice as a non-alcoholic alternative
For Icing
  • 200 g Icing Sugar or powdered sugar
  • 2 tbsp Warm Water

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 150°C (300°F) and grease mini cake tins.
  2. Cream butter and light brown sugar together until light and fluffy.
  3. Incorporate eggs one at a time, mixing until well combined.
  4. Sift in self-raising flour and ground mixed spice, folding gently.
  5. Fold in mixed dried fruit and your choice of liquid (brandy/orange juice).
  6. Pour batter into greased tins, filling them two-thirds full.
  7. Bake for 20-25 minutes or until a skewer comes out clean.
  8. Cool cakes in tins for 10 minutes, then transfer to a wire rack.
