  • 4 pieces ripe peaches grilled
  • 1 cup candied pecans
  • 1 cup feta cheese or plant-based feta
  • 2 tablespoons red or green onions diced
For the Dressing
  • 3 tablespoons honey balsamic dressing or maple syrup for vegan
  • 2 tablespoons olive oil for grilling

Method
 

Grilling and Assembly
  1. Preheat the grill to medium-high, around 400°F (200°C).
  2. Halve the peaches and remove the pits. Brush the cut sides with olive oil.
  3. Grill peaches cut-side down for about 5-7 minutes until caramelized.
  4. In a skillet, combine pecans with butter and sugar, stirring for about 5 minutes until toasted.
  5. Whisk together honey, balsamic vinegar, and olive oil in a small bowl for the dressing.
  6. In a large bowl, combine grilled peaches, candied pecans, and onions. Add feta cheese if using.
  7. Drizzle dressing over the salad, toss gently, and serve on chilled plates.
