Preparation Steps
- Preheat your oven to 375°F (190°C) and grease your madeleine pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- Beat the eggs and granulated sugar until pale and thick.
- Stir in vanilla extract, lemon zest, and lemon juice.
- Fold the dry ingredients into the wet mixture carefully.
- Gently fold in the melted butter.
- Fold in the finely chopped fresh raspberries.
- Fill each mold in the prepared pan about 3/4 full with the batter.
- Bake for 10-12 minutes or until golden and springy.
- Cool in the pan for 2 minutes then transfer to a wire rack and dust with powdered sugar.
