Step-by-Step Instructions
  1. In a stand mixer, combine 8 oz. of cold cream cheese and ½ cup of cold butter, mixing until creamy.
  2. Gradually add 2 cups of all-purpose flour and 1 tsp of pure vanilla extract, blending until the dough forms a soft ball.
  3. Wrap the dough tightly in plastic wrap and refrigerate for about 1 hour.
  4. Preheat your oven to 375°F (190°C) and line your cookie sheets with parchment paper.
  5. Roll out the chilled dough to about ⅛ inch thickness and cut into 2"x2" squares.
  6. Place a small amount of your chosen fruit filling in the center of each dough square.
  7. Bring the corners together, creating a sealed package, and ensure edges are pinched closed.
  8. Arrange filled cookies on the baking sheet and bake for 12-15 minutes.
