  • 1 cup Salted Butter Can substitute with unsalted.
  • 1 cup Dark Brown Sugar Light brown is a substitute.
  • 3 large Eggs At room temperature.
  • 2 teaspoons Vanilla Extract
  • 2 tablespoons Browning Sauce Homemade alternative can be used.
  • 1/4 cup Molasses Optional.
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Nutmeg
  • 1 teaspoon Allspice
  • 2 cups All-Purpose Flour Add breadcrumbs for a cakier texture.
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
For the Fruit Blend
  • 2 cups Fruit for Christmas Cake Pureed dried fruits soaked in rum or wine.
  • 1 cup Wray & Nephew White Overproof Rum
  • 1/2 cup J. Wray & Nephew Red Label Wine Can exclude if opting only for rum.
  • 1 tablespoon Lime Juice
  • 1 teaspoon Lime Zest

Method
 

Step‑By‑Step Instructions
  1. Preheat your oven to 300°F (149°C) and grease a 9-inch round cake pan.
  2. In a mixing bowl, cream together the salted butter and dark brown sugar for 5-6 minutes until light and fluffy.
  3. In another bowl, beat the eggs and mix in vanilla, browning sauce, molasses (if using), lime juice, cinnamon, nutmeg, and allspice.
  4. Fold the egg mixture into the creamed butter and sugar. Gradually incorporate the fruit blend, flour, and baking powder.
  5. Pour the batter into the greased pan and place a pan of water below it in the oven. Bake for approximately 2 hours or until a toothpick comes out clean.
  6. Once baked, soak the cake with 1/2 cup of red label wine for added flavor and moisture, then cool in the pan for 30 minutes.
