  • 12 pieces Medjool Dates pitted
  • 8 ounces Goat Cheese softened
For the Topping
  • 1 cup Walnuts chopped
  • 2 tablespoons Fresh Rosemary finely minced
  • 1 tablespoon Orange Zest from fresh navel orange
  • 1 tablespoon Orange Juice from fresh navel orange
  • 1/2 teaspoon Ground Cinnamon to taste
  • 1/4 teaspoon Sea Salt or kosher salt
  • 2 tablespoons Extra-Virgin Olive Oil
  • 1 tablespoon Hot Honey optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease your baking dish.
  2. Make a lengthwise slit in each Medjool date to create a pocket for stuffing.
  3. Stuff each date with 1 to 2 teaspoons of softened goat cheese.
  4. Mix walnuts, rosemary, orange zest and juice, cinnamon, salt, and olive oil in a bowl.
  5. Spoon the walnut mixture over each stuffed date.
  6. Roast the dates in the oven for 15 minutes until soft and the topping is golden brown.
  7. Allow to cool for 5 minutes, then serve warm or at room temperature.
  8. Drizzle with hot honey just before serving for an extra kick.
