Step-by-Step Instructions
  1. Prepare the Peach Syrup: Wash and pit the peaches, roughly chop them, and combine with water and sugar in a saucepan. Bring to a boil, then simmer for about 15 minutes until soft. Cool and strain the syrup.
  2. Make the Mascarpone Filling: Whip heavy cream until stiff peaks form. In another bowl, blend mascarpone, granulated sugar, 2/3 cup cooled peach syrup, vanilla, and almond extract until smooth. Fold in whipped cream.
  3. Assemble the Tiramisu: Quickly dip each ladyfinger into the reserved peach syrup and arrange in a dish. Spread half of the mascarpone filling over the ladyfingers, then repeat with another layer.
  4. Chill: Cover and refrigerate for at least 6 hours or overnight to meld flavors and firm up texture.
  5. Serve: Carefully slice into squares. Optionally, top with peach compote, reserved syrup, whipped cream, or mint.
