  • 1 each French baguette or any crusty bread
  • 1 cup Gruyère or Swiss cheese shredded, melts beautifully
  • 1 tablespoon fresh parsley optional for garnish

Step-by-Step Instructions
  1. In a large pot, melt butter and olive oil over medium heat. Add the pearl onions and cook, stirring occasionally for 20-25 minutes until caramelized.
  2. Stir in minced garlic and cook for 1-2 minutes until fragrant. Sprinkle in flour and stir for 1-2 minutes to thicken the soup.
  3. Gradually pour in broth while stirring continuously. If using, add white wine for depth. Toss in bay leaf and thyme, season with salt and pepper, then simmer for 25-30 minutes.
  4. Preheat oven to 400°F (200°C). Slice baguette into 1-inch pieces and toast on a baking sheet for 5-7 minutes until golden.
  5. Remove bay leaf from soup, ladle into oven-safe bowls, place toasted baguette slices on top, and sprinkle with cheese. Broil for 3-5 minutes until cheese is bubbly.
  6. Garnish with parsley if desired and serve hot.
