  • 1 cup Salsa can swap with homemade tomato sauce

Step-by-Step Instructions for Healthy Quinoa Casserole
  1. Preheat your oven to 350°F (175°C) and gather your ingredients.
  2. In a small bowl, mix taco seasoning ingredients or set aside pre-made seasoning.
  3. Cook the ground beef or turkey in a skillet over medium heat for 5-6 minutes until browned, then drain excess fat.
  4. Sauté chopped onion and jalapeno in oil in the skillet for 5-10 minutes until soft.
  5. Stir in minced garlic and spinach, cooking for 2-3 minutes until spinach wilts.
  6. Combine sautéed vegetables with cooked meat, fold in quinoa, seasoning, and half the cheese.
  7. Transfer mixture to an 8x8-inch casserole dish, sprinkle with remaining cheese, and spread evenly.
  8. Bake in the preheated oven for 20 minutes, or until cheese is melted and edges are golden brown.
