- Begin by washing and trimming the radishes, then grate them using a box grater or a food processor until finely shredded. Place the grated radishes in a colander over the sink, sprinkle with a little salt, and let them drain for 15 minutes.
- After 15 minutes, take a clean paper towel or some cheesecloth, and gather the salted radishes in it. Gently squeeze to extract any remaining liquid.
- In a medium mixing bowl, combine the drained radishes with finely minced garlic, Greek yogurt, olive oil, and fresh lemon juice. Add in the minced scallions and julienned mint leaves. Stir everything together using a spatula until well incorporated.
