  • 12 oz Linguine or spaghetti or fettuccine
  • 1 bunch Broccolini or regular broccoli
  • 1 cup Castelvetrano Olives or green olives
  • 3 stalks Scallions or chives
  • 3 cloves Garlic or garlic powder
  • 2 tbsp Lemon Juice also include zest
  • 2 tbsp Butter or vegan butter/olive oil
  • 1/2 cup Parmesan Cheese or nutritional yeast
  • 1 cup Crispy Whole Grain Breadcrumbs or panko breadcrumbs

Method
 

Step‑by‑Step Instructions
  1. Prepare the Broccolini by blanching it in boiling water for 2 minutes, then transfer to an ice bath to keep its color.
  2. Cook the Linguine until al dente, reserving 1 cup of pasta water, then drain.
  3. Toast the Breadcrumbs in olive oil over medium heat until golden brown and crispy.
  4. Sauté Scallions and Garlic in the same skillet until fragrant.
  5. Create the Sauce by adding pasta water and lemon juice, simmer until slightly thickened.
  6. Combine and Toss the Linguine with the sauce, folding in Parmesan and Broccolini.
  7. Serve and Garnish with toasted breadcrumbs and extra Parmesan.
