  • 2 tablespoons Lemon Juice Fresh lemon juice is preferred.
  • 3 tablespoons Extra Virgin Olive Oil

For Serving

Method
 

Preparation Steps
  1. Start by bringing a medium-sized pot of water to a rolling boil over high heat.
  2. Carefully add the fresh sweet peas to the boiling water. Cook for about 2 to 3 minutes until tender yet crisp.
  3. Drain the peas in a colander and rinse under cold running water to stop the cooking process.
  4. In a large mixing bowl, combine cooled peas with crumbled feta, chopped mint leaves, lemon juice, and olive oil. Season with salt and pepper to taste.
  5. Gently toss all ingredients together until evenly coated. Serve immediately or chill until ready to enjoy.
