Preparation Steps
- Start by bringing a medium-sized pot of water to a rolling boil over high heat.
- Carefully add the fresh sweet peas to the boiling water. Cook for about 2 to 3 minutes until tender yet crisp.
- Drain the peas in a colander and rinse under cold running water to stop the cooking process.
- In a large mixing bowl, combine cooled peas with crumbled feta, chopped mint leaves, lemon juice, and olive oil. Season with salt and pepper to taste.
- Gently toss all ingredients together until evenly coated. Serve immediately or chill until ready to enjoy.
