  • 2 tablespoons Ube Extract Adjust according to preference
For the Whipped Cream
  • 1 cup Heavy Cream Make sure it’s cold
For the Base Layer
  • 12 pieces Ladyfinger Cookies Can substitute with sponge cake strips
  • 1/2 cup Whole Milk Used to soak ladyfingers
For the Topping
  • 1/2 cup Crushed Ube Cookies or Graham Crackers Adds texture
  • 1 cup Whipped Cream Optional topping

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, whip the heavy cream on high speed until stiff peaks form, about 3-5 minutes.
  2. In another bowl, combine mascarpone cheese, ube halaya, sweetened condensed milk, and vanilla extract. Fold in the whipped cream.
  3. Whisk together whole milk and ube extract in a shallow bowl for the soaking mixture.
  4. Dip the ladyfingers in the soaking mixture and layer them in the jars, followed by the ube mixture.
  5. Top with crushed cookies and add whipped cream if desired. Chill in the refrigerator for at least 2 hours.
