- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Melt ½ cup of unsalted butter in a medium saucepan over low heat. Stir in 1 cup of packed brown sugar until bubbly, about 3-4 minutes.
- Remove from heat and stir in 1 teaspoon of vanilla extract and a pinch of salt.
- In a large mixing bowl, add 6 cups of Chex cereal and drizzle the butter toffee mixture over it. Gently fold until evenly coated.
- Spread the coated mixture onto the lined baking sheet and bake for approximately 15 minutes, stirring halfway through.
- Let the Toffee Chex Mix cool completely before breaking it into clusters.
