  • 1 medium Onion Finely chopped.

  • 1 teaspoon Paprika

Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, add a splash of oil and sauté the finely chopped onion and minced garlic until they become translucent and fragrant, about 5 minutes.
  3. In a large mixing bowl, combine the cooked brown rice, drained black beans, sautéed onion, garlic, cumin, and paprika, mixing well.
  4. Layer sliced sweet potatoes evenly at the bottom of your greased casserole dish.
  5. Spoon the rice and bean mixture over the layer of sweet potatoes, spreading it evenly and pressing down gently to eliminate air pockets.
  6. Pour the vegetable broth evenly over the layered ingredients.
  7. If using, sprinkle a layer of cheese over the top of the casserole.
  8. Cover the casserole dish with aluminum foil and bake in the preheated oven for about 55-60 minutes, or until the sweet potatoes are tender.
  9. Remove the casserole from the oven and let it cool slightly for about 10 minutes before serving.
