Cooking Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, add a splash of oil and sauté the finely chopped onion and minced garlic until they become translucent and fragrant, about 5 minutes.
- In a large mixing bowl, combine the cooked brown rice, drained black beans, sautéed onion, garlic, cumin, and paprika, mixing well.
- Layer sliced sweet potatoes evenly at the bottom of your greased casserole dish.
- Spoon the rice and bean mixture over the layer of sweet potatoes, spreading it evenly and pressing down gently to eliminate air pockets.
- Pour the vegetable broth evenly over the layered ingredients.
- If using, sprinkle a layer of cheese over the top of the casserole.
- Cover the casserole dish with aluminum foil and bake in the preheated oven for about 55-60 minutes, or until the sweet potatoes are tender.
- Remove the casserole from the oven and let it cool slightly for about 10 minutes before serving.
