Method
 

Step-by-Step Instructions
  1. Preheat your oven to 175°C (350°F) and prepare your baking dish with non-stick baking paper.
  2. In a large bowl, mix the all-purpose flour, rolled oats, salt, and baking soda until evenly blended.
  3. Melt the unsalted butter in a microwave-safe bowl, then mix in the brown sugar and vanilla extract until combined.
  4. Pour the melted butter mixture into the dry ingredients and mix until well combined, forming a crumbly dough.
  5. Press about ¾ of the dough into the baking dish and bake for 10 minutes until slightly set.
  6. Mix the crunchy peanut butter and maple syrup in a small bowl until smooth.
  7. Spread the peanut butter mixture over the baked base and sprinkle the remaining dough on top.
  8. Return the bars to the oven and bake for another 10 minutes until golden brown.
  9. Let the bars cool on the counter for 30 minutes and then refrigerate for 30 minutes to set.
  10. Lift the bars out using the parchment paper and cut into 9 squares to serve.
