- Preheat your oven to 175°C (350°F) and prepare your baking dish with non-stick baking paper.
- In a large bowl, mix the all-purpose flour, rolled oats, salt, and baking soda until evenly blended.
- Melt the unsalted butter in a microwave-safe bowl, then mix in the brown sugar and vanilla extract until combined.
- Pour the melted butter mixture into the dry ingredients and mix until well combined, forming a crumbly dough.
- Press about ¾ of the dough into the baking dish and bake for 10 minutes until slightly set.
- Mix the crunchy peanut butter and maple syrup in a small bowl until smooth.
- Spread the peanut butter mixture over the baked base and sprinkle the remaining dough on top.
- Return the bars to the oven and bake for another 10 minutes until golden brown.
- Let the bars cool on the counter for 30 minutes and then refrigerate for 30 minutes to set.
- Lift the bars out using the parchment paper and cut into 9 squares to serve.
