Ingredients
  

For the Tofu Spread
  • 1 block Extra Firm Tofu Press if softer varieties are used
  • 1/2 cup Raw Cashews Soaked in boiling water for 15 minutes
  • 1 each Lemon Juice and zest
For the Marinade
  • 3 cups Heirloom Tomatoes Sliced
  • 1 each Red Onion Thinly sliced
  • 1 teaspoon Sumac Can substitute with lemon zest and vinegar
  • 1/4 cup Fresh Herbs (Parsley and Basil) Chopped
For the Bread
  • 4 slices Hearty Bread Sourdough or whole wheat, gluten-free optional

Method
 

Preparation Steps
  1. Soak the cashews in a bowl of boiling water for 15 minutes. Drain and set aside.
  2. In a blender, combine soaked cashews, tofu, lemon juice, and zest. Blend until creamy, about 1-2 minutes. Refrigerate for 30 minutes.
  3. Slice the red onions and mix with olive oil, vinegar, lemon juice, sumac, salt, and parsley. Let marinate for 10-15 minutes.
  4. Slice heirloom tomatoes and mix with olive oil, minced garlic, parsley, basil, and lemon juice. Let sit for 5-10 minutes.
  5. Spread the tofu mixture on one side of each slice of bread. Layer marinated tomatoes and onions, then top with lettuce if desired.
  6. Close the sandwich and serve immediately for peak freshness.
