Preparation Steps
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
- In a large bowl, mash 2 medium ripe bananas until smooth, about 2 minutes.
- Stir in 1/2 cup peanut butter, 1/4 cup honey or maple syrup, and 1 teaspoon vanilla extract until combined.
- Add 2 cups rolled oats, 1/2 teaspoon salt, and 1 teaspoon cinnamon (if using); stir until well mixed.
- Fold in optional add-ins like 1/2 cup chocolate chips, chopped nuts, or dried fruit.
- Pour the mixture into the prepared baking pan, smoothing the top with a spatula.
- Bake for 25 to 30 minutes until edges are golden and center is firm.
- Allow to cool for about 10 minutes, then lift out using parchment and transfer to a wire rack.
- Once cooled, slice into 12 even pieces and enjoy!
