- Measure about 9 cups of Rice Chex cereal into a large paper bag.
- In a microwave-safe bowl, combine approximately 2 cups of butterscotch chips and microwave until fully melted.
- Melt ½ cup of salted butter and combine with the butterscotch, vanilla, and butter extract.
- Pour the butterscotch mixture into the bag with the Rice Chex and add 1 cup of toffee bits, then shake to coat.
- Spread the coated mixture onto a cookie sheet and allow to cool for about 20 minutes.
- Pour back into the bag, add 1-2 cups of powdered sugar, shake to coat evenly.
- Serve in a bowl or individual bags, optionally sprinkle with lightning bolt sprinkles.
