  4. Whisk together egg and water; brush egg wash generously over each pastry.
  5. Bake pastries for 15-18 minutes or until golden brown; monitor and tent with foil if browning too fast.
  6. Heat heavy cream until simmering, pour over chocolate chips; let sit 5 minutes and whisk until smooth.
  7. Drizzle ganache over pastries after cooling for 10 minutes on wire rack; enjoy!
