- Begin by dicing the English cucumbers into small, bite-sized pieces. Sprinkle a pinch of salt over the cucumbers and let sit for about 10 minutes.
- In a separate bowl, combine yogurt, crumbled feta cheese, chopped fresh herbs, lemon zest, lemon juice, and a dash of pepper. Stir until well blended.
- After 10 minutes, drain the cucumbers and pat dry with a paper towel. Add the cucumbers back into the mixing bowl with the yogurt mixture.
