Step‑by‑Step Instructions
  1. In a medium bowl, combine oyster sauce, fish sauce, grated garlic, and ginger. Coat the beef steak generously with this marinade and allow to marinate for at least 30 minutes.
  2. Toast glutinous rice in a dry skillet over medium heat until golden brown, about 5–7 minutes. Let it cool completely before grinding into a coarse powder.
  3. In a mixing bowl, whisk together fish sauce, lime juice, tamarind paste, evaporated cane sugar, chili flakes, chopped cilantro, scallion, and 2 teaspoons of toasted rice powder to create the Nam Jim Jaew sauce.
  4. Preheat grill pan over medium-high heat. Grill marinated beef diagonally for about 4–5 minutes on each side for medium-rare, ensuring visible grill marks.
  5. Let the beef rest for 10 minutes, then slice thinly against the grain for tenderness.
  6. Serve the sliced beef on a platter, lightly dusted with white pepper and additional toasted rice powder, alongside fresh vegetables and Nam Jim Jaew sauce.
