  • 2 cups Carrots, grated You can use baby carrots for convenience.
  • 2 medium Apples, diced Granny Smith or Honeycrisp recommended.
  • 1 cup Red Cabbage, shredded Green cabbage can be substituted.
  • 1/2 cup Dried Fruit Raisins or cranberries; can swap for chopped dates or apricots.
  • 1/2 cup Nuts Walnuts or pecans; can use almonds or sunflower seeds.
  • 1/4 cup Parsley, chopped Fresh cilantro or mint can also be used.
For the Creamy Citrus Dressing
  • 1 cup Greek Yogurt Can substitute with sour cream.
  • 1/4 cup Mayonnaise Low-fat mayo or yogurt for a lighter version.
  • 1/4 cup Orange Juice Lemon juice can also enhance the flavor.
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Honey Agave or maple syrup as alternatives.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.

Method
 

Preparation Steps
  1. Grate the carrots using a box grater or food processor, then transfer to a large mixing bowl.
  2. Core and dice the apples into bite-sized pieces and add to the bowl.
  3. Finely shred the red cabbage and incorporate it into the bowl.
  4. Fold in the dried fruits and chopped nuts.
  5. In a separate bowl, whisk together Greek yogurt, mayonnaise, orange juice, lemon juice, honey, salt, and pepper until smooth.
  6. Pour the creamy citrus dressing over the salad mixture and gently toss until well-coated.
  7. Taste the salad and adjust the seasoning as needed.
  8. Chill the salad for at least 15 minutes before serving, optionally garnishing with extra nuts or chopped parsley.
