Cooking Steps
  1. Begin by dicing the yellow onion and mincing the garlic. Peel and cube the sweet potato, and slice the carrots into rounds.
  2. Combine the diced onion, minced garlic, cubed sweet potato, and sliced carrots in your slow cooker. Add the lentils, curry powder, ground cloves, diced tomatoes, tomato sauce, and vegetable broth. Stir until well mixed.
  3. Secure the lid on your slow cooker and set it to high for approximately 4 hours or low for 7-8 hours.
  4. After cooking time is complete, stir in the coconut milk, and taste and adjust seasoning as necessary.
  5. Serve the Curry into bowls, and garnish with sliced red onion and fresh cilantro.
