Step‑by‑step Instructions for Crispy Youtiao
  1. In a stand mixer, combine 3 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, 1 teaspoon of salt, and 2 tablespoons of sugar. Mix these dry ingredients on low speed for 1-2 minutes until well incorporated.
  2. Gradually add 1 large egg, 1 cup of water, and 2 tablespoons of vegetable oil to the dry mixture. Mix on low speed for 7-9 minutes until the dough is elastic and smooth.
  3. Shape the kneaded dough into a rectangle, brush lightly with oil, and cover with a towel. Let it rest at room temperature for 2 hours.
  4. Fill a deep pot with oil and heat to 180-190°C (400°F). Test temperature by dropping a small piece of dough; it should bubble vigorously.
  5. Stretch pieces of dough into long strips, about 1 inch wide and 8-10 inches long. Fry in small batches for about 1 minute on each side or until golden brown.
  6. Use a slotted spoon to remove youtiao from the oil and drain excess oil on a cooling rack lined with paper towels.
  7. Serve your Crispy Youtiao warm, dusted with powdered sugar or paired with sweetened condensed milk or spicy sauces.
