- Peel the saba bananas and slice them lengthwise into quarters.
- Lay a spring roll wrapper on a flat surface, place one banana quarter at the corner, add ube halaya and sprinkle brown sugar.
- Fold the bottom corner over filling, roll diagonally, tucking in the sides and sealing with water.
- Heat cooking oil in a frying pan or wok to 350°F (175°C).
- Fry the rolled turon for 3-5 minutes on each side until golden-brown.
- Drain on paper towels and allow to cool slightly before serving.
- Serve as is or with a scoop of ice cream or condensed milk.
