- Rinse jalapeño peppers under cold water, cut off stems, slice in half lengthwise, and remove seeds if desired. Slice into spears.
- Combine all batter ingredients in a large mixing bowl, whisk until slightly thinner than pancake batter.
- Heat vegetable oil in a deep fryer or heavy skillet to 365°F.
- Dip each jalapeño spear into the batter and fry in batches for 2-3 minutes until golden brown.
- Remove fried jalapeños with a slotted spoon, draining excess oil on paper towels, and sprinkle with kosher salt if desired.
