  • 1 cup Beer can use club soda or sparkling water
Frying Ingredients
  • 2 inches Vegetable Oil or peanut/canola oil for frying
Main Ingredients
  • 4 count Jalapeño Peppers omit seeds for a milder flavor
  • 1 teaspoon Kosher Salt optional for seasoning after frying

Method
 

Preparation
  1. Rinse jalapeño peppers under cold water, cut off stems, slice in half lengthwise, and remove seeds if desired. Slice into spears.
  2. Combine all batter ingredients in a large mixing bowl, whisk until slightly thinner than pancake batter.
  3. Heat vegetable oil in a deep fryer or heavy skillet to 365°F.
  4. Dip each jalapeño spear into the batter and fry in batches for 2-3 minutes until golden brown.
  5. Remove fried jalapeños with a slotted spoon, draining excess oil on paper towels, and sprinkle with kosher salt if desired.
