- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering, about 2 minutes.
- Add 1 pound of shrimp and 8 ounces of sausage, sprinkle with 1 teaspoon Cajun seasoning, and sauté for 5–6 minutes until shrimp is pink and opaque. Transfer to a plate.
- Add 2 tablespoons of butter to the skillet; melt it and scrape the pan to incorporate flavor.
- Sauté 1 sliced onion, 1 sliced red bell pepper, and optional 1 sliced green bell pepper in melted butter for 4–5 minutes until softened.
- Stir in 3 cloves of minced garlic and sauté for another 30 seconds.
- Pour in 1 cup of chicken broth, remaining Cajun seasoning, and 1 cup of heavy whipping cream. Bring to a gentle simmer and cook for 5–7 minutes until sauce thickens.
