  • 1 tbsp Kasoori methi Crushed for better aroma.
  • 1 tbsp Cumin
  • 1 tbsp Coriander
  • 1 tsp Turmeric
  • 1 tbsp Garam masala
  • 1 tsp Salt Adjust to taste.
For the Sauce
  • 1 medium Onion (finely chopped)
  • 4 cloves Garlic (minced)
  • 1 inch Ginger (fresh, minced)
  • 1 cup Heavy cream Coconut cream for a dairy-free option.
  • 1/2 cup Cashews (ground) Can swap with almonds.
For Garnishing
  • 1 tbsp Kasoori methi Sprinkle before serving.

Method
 

Step-by-Step Instructions
  1. In a large bowl, combine the chicken pieces with yogurt, crushed spices, and a pinch of salt. Cover and let marinate for at least 1 hour.
  2. Heat 2 tablespoons of oil in a heavy-bottomed pan over medium heat. Sauté onions until golden brown for 5-7 minutes.
  3. Add minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the marinated chicken pieces to the pan, searing for 6-8 minutes until browned on all sides.
  5. Reduce the heat and pour in the cream, stirring gently. Add ground cashews and cook on low for 5-7 minutes.
  6. Cover and let simmer on low heat for 15-20 minutes, stirring occasionally until chicken is fully cooked.
  7. Stir in crushed kasoori methi before serving and adjust seasoning as needed.
