For the Grits
  • 1 cup Grits Choose stone-ground for best texture
  • 4 cups Water Or broth for added flavor
  • 1 cup Cheddar Cheese Shredded
  • 1 tablespoon Butter For creaminess
  • Salt to taste
For the Crawfish
  • 1 pound Crawfish tails Cooked and peeled
  • 1 tablespoon Olive Oil
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 1 bell pepper Bell Pepper Diced
  • 1 teaspoon Cajun seasoning Or to taste
  • Salt to taste

Method
 

Cooking the Grits
  1. In a pot, bring water to a boil. Stir in grits and salt, reduce heat and cook until thickened, about 20 minutes.
  2. Stir in cheese and butter until melted and combined. Set aside and keep warm.
Preparing the Crawfish
  1. In a skillet, heat olive oil over medium heat. Add onion, garlic, and bell pepper, sauté until soft.
  2. Stir in crawfish tails and Cajun seasoning, cook for an additional 5 minutes.
Assembly
  1. Serve the cheesy grits topped with the crawfish mixture. Enjoy while warm!
