For the Quesadilla Base
  • 1 cup Oat Flour Can substitute with all-purpose flour.
  • 2 pieces Tortilla (high-fiber or regular) Any tortilla will work.

Method
 

Preparation
  1. Begin by blending the cottage cheese in a food processor or blender until smooth, about 1-2 minutes.
  2. Transfer it to a mixing bowl and stir in the egg whites until well combined.
  3. Sprinkle in the oat flour along with any seasonings of your choice and mix thoroughly.
  4. Preheat the non-stick skillet over medium heat for about 2 minutes.
  5. Pour half of the egg mixture into the skillet and cook undisturbed for 2-3 minutes.
  6. Sprinkle your choice of shredded cheese over the cooking egg base and fold the tortilla.
  7. Flip the quesadilla and cook for another 2-3 minutes until golden.
  8. Remove from skillet, let sit for a minute, then slice and serve.
