- Sprinkle in the oat flour along with any seasonings of your choice and mix thoroughly.
- Preheat the non-stick skillet over medium heat for about 2 minutes.
- Pour half of the egg mixture into the skillet and cook undisturbed for 2-3 minutes.
- Sprinkle your choice of shredded cheese over the cooking egg base and fold the tortilla.
- Flip the quesadilla and cook for another 2-3 minutes until golden.
- Remove from skillet, let sit for a minute, then slice and serve.
