  • 1 pound Fresh Clams Cleaned and tightly closed
  • 1 can Coconut Milk Provides creamy texture
  • 1 stalk Lemongrass Smashed and chopped
  • 3 cloves Garlic Mince finely
  • 1 tablespoon Ginger Grated
  • 2 tablespoons Fish Sauce Essential for flavor
  • 1 tablespoon Lime Juice Fresh is ideal
  • 2 pieces Red Chili Peppers Optional, adjust to taste
For Garnish
  • 1/4 cup Fresh Cilantro Can substitute with parsley
  • Salt To taste
  • Black Pepper To taste

Method
 

Cooking Instructions
  1. Clean fresh clams under cold running water and soak in a bowl for 20 minutes.
  2. In a large pot, heat coconut milk over medium heat until simmering.
  3. Add smashed lemongrass, minced garlic, and grated ginger to the pot, and stir for 2-3 minutes.
  4. Stir in the fish sauce, fresh lime juice, salt, and black pepper. Add red chili peppers if desired.
  5. Add the cleaned clams to the pot, cover, and steam for 5-7 minutes until clams open.
  6. Discard any unopened clams. Gently swirl the pot to mix clams with the broth.
  7. Serve in bowls with plenty of broth, garnishing with chopped cilantro.
