Cooking Instructions
- Clean fresh clams under cold running water and soak in a bowl for 20 minutes.
- In a large pot, heat coconut milk over medium heat until simmering.
- Add smashed lemongrass, minced garlic, and grated ginger to the pot, and stir for 2-3 minutes.
- Stir in the fish sauce, fresh lime juice, salt, and black pepper. Add red chili peppers if desired.
- Add the cleaned clams to the pot, cover, and steam for 5-7 minutes until clams open.
- Discard any unopened clams. Gently swirl the pot to mix clams with the broth.
- Serve in bowls with plenty of broth, garnishing with chopped cilantro.
