- In a small saucepan, melt 6 tablespoons of unsalted butter over low heat. Stir in 2 tablespoons of fresh lemon juice, a pinch of sea salt, and a dash of ground black pepper.
- Gently fold 1 cup of chopped cooked lobster meat into the warmed butter sauce for about 2–3 minutes.
- In a skillet, melt 2 tablespoons of additional butter over medium heat. Toast the split-top hot dog buns until golden brown, roughly 2 minutes per side.
- Once toasted, fill each bun with the lobster mixture and sprinkle chopped fresh chives on top, if desired.
- Serve immediately with lemon wedges and drizzle with extra melted butter.
